ok currently right now i decided to get into chocobo raiseing again and trying to make a chocobo for raceing
right now my chocobo is on day 30 and its stats are strength better than average and endurance better than average.
i tried to race the 3 trainers chocobo and i am constantly loseing for some reason. i am always ahead thru out
the whole race but during the last leg they always catch up am i missing something i thought a chocobo with high endurance and strength
was the way to go for chocobo raceing and if i need to raise other stats is there any way to do it without decreasing my str and endurance,
and wont effect what i worked on so far?

Are you referring to a race against the "3 hume trainers" and their black chocobo "Best"?

My impression was that your rate of victory was dependent on your level of chocobo affection so even a bird trained to be a digger/treasure-hunter can still win from time to time. In the end, the only benefit to winning that race is get the "Story of a Happy Chocobo" to teach your bird the "Auto-Regen" trait.

If you're not after that story, I'd just skip competing with others, unless its to remedy chocobo boredom, and move to other training plans.

If you're just trying to win that official race, I suspect the cheapest and best plan would be to just pushing STR and END til they are 1st class. Give your bird a speed apple if you want to rush things and avoid waiting for the stats to improve.

A really good guide for each of the official races is over here
http://www.killingifrit.com/forums.php?m=posts&q=159932

For overall breeding, remember that there are 8 levels for each chocobo stat. Antharis made a post about it here

http://www.killingifrit.com/forums.php?m=posts&q=154755

and broke it down that a bird can have 637 points of stats. The stats and the chocobolevels are as follows

1.) Poor: 0-31
2.) Substandard: 32-63
3.) A bit deficient: 64-95
4.) Average: 96-127
5.) Better than average: 128-159
6.) Impressive: 160-191
7.) Outstanding: 192-223
8.) First-class: 224-255

A quick breakdown of how many points a training option adds or subtracts can be found here

http://wiki.ffxiclopedia.org/wiki/Category:Chocobo_Raising

The important part is this

Name Strength Endurance Discernment Receptivity Affection Energy Payment

Basic Care 1 1 1 1 -3% -3% -
Resting - - - - - +?% -
Taking a walk 3 3 -3 -3 -3% -3% -
Listening to music -3 -3 3 3 -3% -3% -
Exercising alone x5% - -4 -4 -7% -5% -
Exercising in a group - x5% -4 -4 -7% -5% -
Interact with children -4 -4 x5% - -7% -5% -
Interact with chocobos -4 -4 - x5% -7% -5% -
Carrying packages 5 5 -5 -5 -8% -10% 100-200
Exhibiting to the public -5 -5 5 5 -8% -10% 100-200
Delivering messages 8 - - -6 -10% -25% 200-400
Digging for treasure - -6 8 - -10% -25% 200-400
Acting in a play -6 - - 8 -10% -25% 200-400

Now how many points a "care for your chocobo" option provides or feeding it a zegham carrot(which improves MND stats) or a vomp carrot (which improves PHY stats) I don't know. The total effect from using up an entire energy bar is LESS than the effect of a care plan (aside from perhaps basic) though.
