Yep, DoTs stack with Helices. And tag just means to claim something, usually.

Its definitely possible. I tried a while back and i got him down to about 30% before i ended up making a few stupid mistakes and dying.

I've been SCH75 for a while now and I'm still not 100% sure how stacking Helix spells goes about. Do you stack em in the same sence that you can stack Burn, Choke, and Shock together? or can u stack any helix with any helix as much as you wish?

nop you cant stack helix buth can mix with burn bio etc

Nope, you can't stack helices, but you can mix them with Burn, Bio, etc.

Monks don't use ranged attacks.

Furthermore, if you let him catch up to you without some sort of movement speed enhancement, you're going to die anyway, so any buffs or weakness is quite irrelevant.

That's all quite moot, though. Using proper pathing, he will never touch you, regardless of whether or not you're running faster than him or not. I initially started soloing him as BLM/RDM for lack of anything else, and ended up using RDM/THF more often than not solely for the sake of not having to purchase a Hermes Quencher.
