I'm still very much on the fence about making a craft my "main" (with the intention to take to 100).
My main is SAM, so first I thought WW, to make arrows, shihei, and later on the cursed gear. However, I hear more and more that crafting isn't what it used to be. I'm just not sure if those are the same kinds of cynical people who also say stuff like "don't come back to FFXI."
So I was thinking about Alchemy. Seems Pots/Powders still sell a good bit, and then there are a few big ticket items higher up. I know Ohat isn't used as widely anymore, but do Alchemists still make good money on Hakutaku Eyes for the pop?

the eye clusters only sell for like 200-400k now, its kinda a pain to go farm them all (assuming you dont want to buy singles)
snk/invis/echos can still net somee profit, not much but anything is some.
im still at 88, but ive farmed allllot of what ive done so it never costed me much at all to level it.
use this page here to check through profits, check out the recruit stuff too since youll be HQn that a lot at 60+

theres some stuff like ether holly that costs 6k and sells for 30k, but it sells veeeery slowly since its for relic or something. random items are nice profit, but make sure they sell often enough before trying to make an income from them
holy water (distilled water+light crystals) can npc for a lot more then the 13g holy water costed you, stuff like this u can spam in freetime for easy, quickselling but low profit profits

Basically nothing. Leather is 4 from farming sheepskins and synthing them into wool/leather. Fishing is 3 from fishing up moat carp in Bastok for quick money in early levels.
I've got a blank slate, and since I can go anywhere with it right now, I want to be smart about it.

In my adventures I have tried multiple crafts(SM 56, CC 60, GS 38, LC 35), and done some H.E.L.M. and fishing to try and make a profit from them. After all that I am in the same boat as you that I am still trying to decide what craft to take to 100. Every time I think I may have made a decision, SE has to nerf a craft do to RMT exploitation. Sadly SE missed the boat when they created the game. They made goldsmithing, smithing, and clothcrafts and leathercraft the type of crafts which you can make large sums of gil of one item. The downfall is that there is no need to repair items after repeated use. The other problem with this is that eventually the server is becomes abundant with those scorpion harneses and Haubergeons that the price drops dramatically. Crafts that have lots of consumables like woodworking, alchemy, and cooking might land you a more steady income. Just figure out what you can be happy with. I personally have turned to gardening but I dont do ores like everyone else i found steady income from a harvest that I sell to NPCs and the NPCs price is always the same, and my yields average about the same every week. GL in your ventures man, and remember ultimately consumeables will be needed on a regular basis until the servers are shutdown.

Crafting is not a "quick fix." It's a tool that increases the fruits of your labour. While it is possible to only do a few synths where the HQ is profitable, this isn't a very wise approach. Every craft is capable of bringing in several hundred k of profit daily (not including the profit from large synths) if it is employed in the right manner and the crafter works hard. It is, however, slightly more difficult to do this in cooking due to the large synth mat requirements in their recipes.
