This is tough for me to just jump right out and say because there is so much good video game music out there....
I liked Chrono Trigger.
(addendum: the game can be crappy but the music can be good, so post away!)

I love game music, and there's so much good stuff out there that choosing just one soundtrack is impossible.
I reeeeeally love battle themes tho, and I can list a few of my favorites:
Suikoden 2 - Luca Blight Battle
Final Fantasy 12 - Boss Battle
Final Fantasy 11 - ToAU Final Battle (not saying against who to not spoil it lulz)
There's so much more, I can't post them all tho :<

Xenosaga - Zarathustra
Xenogears - Ship of Regret and Sleep
Xenogears - Light from the Netherworld
In short, I have a hard-on for Yasunori Mitsuda's music. I also like some of Nobuo Uematsu's stuff, but I'm sure you can find someone else to spam his songs.

Persona 3 - Had some good music. I loved Burn my Dread
FF9 - Melodies of Life was pretty good.
FF6 - Kefka's battle music was pretty good to. Also loved Techno de Chocobo or w/e it was called.
Chrono Trigger - Had some good tracks. Loved Crono's theme
FF4 - I loved the battle theme and that one track that plays when Kain and Cecil set out for the village of summoners. Can't remember the name of the song. I know it's used during the main menu of FF12 though.
Dr. Mario - Fever FTMFW
The World Ends With You - Lullaby For You, Transformations, Calling, and Deja Vu are pretty awesome songs.

Frog's Theme from Chrono Trigger was always and will always be my favourite.
Yuna's Ballad from FFX is nice.
Aeris' Theme from FF7. (Yeah, yeah.)
There's all kinds of badassery in FFXI.

Feng, I love you for picking Xenogears.
I like the music used in the following games the most:
Xenogears
Awesome game despite its flaws, and gorgeous music. Allow me to post some of my favourites.

The Final Fantasy series (bar X-2)
Don't think I really need to post examples of these. Uematsu is a musical genius.
Soul Calibur
Some pieces are really brilliantly composed in my opinion. My personal favourite:

I'll come up with a few more at a later stage.

By far my favorite theme used in a video game was "Corridors of Time" from Chrono Trigger.
Here's a link to the remixed version that was originally intended to go into "Chrono Trigger Resurrection" ... the fan-made remake that was shut down by SE:
Corridors of Time - Remix
Incidentally and sorry for going OT, but did anyone read the Hashimoto interview last month when he crapped on the entire Chrono Trigger fan-base and accused them of not supporting the series:
Hashimoto being an ass.
And SE wonders why people complain about their customer service.

The musical scores from MGS2 are good.

The Xenogears soundtrack brings back so many memories
I'd never play it again due to its lenght (it still is the longest game ever appeared on the PS1 I think)
This has always been my favorite theme from that game:
Also, talking about games that bring up sweet memories...
And I agree on Mirror's Edge. The soundtrack is cool, I'm very much into techno/ambient music, but the game itself... ugh, that was some horrible gameplay lol.

Video embedding guide for Renzuko:
every video has an url, you can see it on the video's page in the info box.

To embed a video you just need to enter the final part of the url, overlayed in yellow here, in the tags. The final part of the video is everything that comes after the =.
Example:
the video's url is http://www.youtube.com/watch?v=LpbDDwWATuY, to embed it you just type LpbDDwWATuY (without the spaces in the tag).
Result:
Got it now?
