Pankration monster/job help

I've been playing Pankration for a bit now, and I want to choose the right job for my Pugil, or choose a different monster altogether.

Right now my Pugil is Lv17 and he's a PLD. He currently has the following Feral Skills (added):
- Main Job: Paladin
- Job Trait: Paladin
- White Magic Scrolls
- Instant Stoneskin (Lv. 41)

And the followin innate Feral Skills:
- Resist Paralysis (Lv.49)
- STR +25

If I were to keep my Pugil instead of changing him out for another monster, I would have to choose between two jobs that I want him to be. Paladin and Dark Knight.

These are the setups for the jobs if i take either to Lv50 (Assuming the total is 85 FP):

<Paladin>
- Main Job: Paladin (8 FP)
- Job Trait: Paladin (12 FP)
- White Magic Scrolls (17 FP)
- Attack Bonus (30 FP)
- (Divine, Healing, or Enhancing) Bonus (17 FP)

<Dark Knight>
- Main Job: Dark Knight (8 FP)
- Job Trait: Dark Knight (12 FP)
- Black Magic Scrolls (17 FP)
- Evasion Bonus (30 FP)
- Dark Magic Bonus (17 FP)

I like both because they arent full Mage jobs or full DD jobs (that dont use magic at all). And I like Pugils because of their defensive abilities Water Wall and Water Shield. I would use either job defensively so that my Pugil uses the defensive abilities and the defensive spells (Pro/Shell/Cure; Stun/Sleep/Drain).

Now, if I were to choose a different monster altogether I would definitely choose a Crab, a Crimson Knight Crab to be specific (Because of the color). I chose the crab for three reasons: High FP, already PLD, and really good defensive abilities.

I'm not completely sure what I would put into this monster, but since I'll have more FP at my disposal, I could give it's attacks an added effect like Stun or atta support job. In Paladin though we would still be given his job traits and white magic scrolls. Im actually now leaning more on getting a Crab now, and perhaps later going back and making my Pugil a DRK.

I've also noticed that before a certain level, my Pugil only had Resist Para as his innate. But after a certain level he aquired STR +25. Is this normal? because I could've sworn he didn't have STR+25 before.

Edit: I've chosen some skill to be on my Crab so i have a base list:
- Job Trait: Paladin (8 FP)
- White Magic Scrolls (17 FP)

I'm considering adding Attack Bonus for 30 FP which will leave me with 35 FP to use. But I'm also considering getting Stun Attacks for 38 FP. I was wondering if I could get some insight on what skills to choose for a Crab that would be defensive and probably tame (whatever tame/wild does).
