As I understand it, stunning Fever Pitch doesn't reset the mob's TP; he'll just re-use the ability when unstunned, so not sure how useful that tactic would be overall.
Also, the triple attack mentioned was probably the ability to use Fever Pitch 3 times in a row, not normal melee attacks.
Abyssea NMs seem to resist Chi Blast damage, so don't think you could duo rdm+mnk on it. 11-Boost Chi Blast did 217 on Lugarhoo, and I had a similarly low result on another NM (can't remember which one; Adze, maybe?) when I was waiting off weakness.
Personally I'd still go for pld/mnk/smn/whm/rdm/brd for it (smn for hateless damage that isn't affected by intimidates, rdm doing enfeebling+nukes). Add a thf for TH+acid bolts if you want. Should be able to beat in 5-10 minutes.

I can see why you might change pld to mnk (I'd still prefer the pld tank, but that's partly because I don't have the room to carry around a -PDT set along with all my usual stuff), but why the change from smn to dnc? They serve entirely different purposes. You can't land/get sambas if you're intimidated out of hitting, TP gain will be restricted, and dnc is pretty limited in damage it can do without meleeing.
In the two runs I've done, all the melee pretty much flatlined in damage after the ~3 minute mark because of intimidations (total fight time was 5 minutes and 8 minutes). The two best options to keep doing damage at that point are rng and smn, with smn being the safer option due to the hateless nature, though rng will easily do more damage.

If MNK can't hold hate, PLD can't either, which is the main restriction on bringing extra damage. DNC is there for extra kill speed as much as healing.

What hate reset? Having fought it a couple times, and seen it do both Call to the moon and Fever Pitch I see no discernible hate reset at all. It's hit me with Fever Pitch once, left me, I cured myself and came right back to me, if Fever Pitch reset hate it would not have come back to me given how close my friend and I were in terms of enmity. The only "hate reset" it may have is losing enmity from the damage you take from Fever Pitch, but I am 100% certain that it does not reset hate at all.

Funny thing, I haven't been Boosting for Chi Blast in longer than I can remember, but I do use it to apply Penance or to pull mobs and I'd been noticing that it seemed to be doing more damage than usual. I think they may have done something, but I cannot figure out what.

My group was about to attempt the NM with four people, but when we couldn't even kill a Luison properly it was clear that we shouldn't bother. Are the intimidates so horrible that rangers and summoners are very valuable? May just wait until a later time to pop this.

Ugh. Just tried Lugarhoo and got it down to 24% before we had to wipe. Fevered Pitch spams killed both me and the other monk tank. Went in with Mnk Mnk Brd Rdm Blm, though the Red Mage wasn't a stellar healer and I think that is what caused us to fail. Didn't erase the Defense Downs from Fevered Pitch either.

Did you have Counterstance up? What I've been reading thus far suggests that Counterstance is a bad idea, given Fevered Pitch manages to sneak through Utsusemi. Moreover, a healthy chunk of HP and a proper -Physical Damage Taken set seem to be advisable for surviving at low HP.

I did not have counter stance up actually. The first fevered pitch hit me for 606 damage, then the second for 1004 after the first fevered pitch applied defense down. Both I had my -Physical Damage gear on for. Since they also stun it got in two melee hits as well and I went down. I was surprised they did so much damage in -25% damage taken, but whatever. Just a little annoyed since I have to acquire another Filthy Gnole Claw and they weren't willing to farm Luisons.

Probably obvious to you now, but really should bring two jobs capable of healing a good amount in a short amount of time, not just one.
