I was wondering if it is possible in any way? Do I need the PS2 discs in order to do this if it's possible?

Yea its possible. I played it on my 60 gig, and I believe it's also possible to play it on the slim models.
You do need the PS2 discs, however, but before that go to the PS store and DL a "PS2 hard drive". I put that in quotes because its just a pseudo ps2 hard drive so the PS2 FFXI discs think its the ps2 which is why those discs work on both the fat and slim models. After you DL that, you just pop in the cds and go through the painful process of updating and installing all those updates and patches.
After that you will be read to go.
Oh yea, forgot to mention the PS Store is still down for two more days, but I'm sure you knew that already lol. Thought I'd mention it in case you didn't know. So you will have to wait till its back up to DL that pseudo PS2 hard drive. Just in case tho, thought I'd mention that. Can use that time to find a affordable vanadiel collection lol.

Finding those damn discs seems impossible. Searched in ebay and amazon... in ebay it goes for around 200 bucks and amazon the same. ;(

Yup, that's what I've been told lol. A friend of mine was also planing on getting back in FFXI, but had the same problem as you. He stop looking temporarly and went to DCUO. You can try your luck at craigslist if amazon and ebay are still trying to rip you off lol.

I was under the impression that you could play it on the slim models as long as you have that PS2 hard drive data downloaded off the PS store. I can't test it since I have the fat model, but I remember someone saying that the FFXI disks were the only ps2 game the slims could read only when you have that PS2 hard drive data downloaded. That is of course unless they were talking out their ass.

They were. To play any PS2 games, you need a PS3 that is backwards compatible. That only includes the Fat models, which have either the entire PS2 chip-set built in or firmware for emulation. All that HDD update does is allow PS2 games that were programmed to use the PS2 HDD to recognize and use the PS3 HDDs. It is not a workaround to Sony leaving backwards compatibility out of the Slim models.
HOWEVER! Sony has mentioned that the do plan on possibly releasing PS2 games on PSN for download. Unless they do something to the game itself, they would certainly have to update the Slims for emulation. In which case, they would most likely do what Microsoft did for original Xbox games to play on 360: create specialized emulation files for each game.
In other words, Ryo-go, you're humped.

I got the fat version. But non the less I'm screwed. I'm not paying more than 50 bucks for those PS2 discs lol

I have not added PS3 Slim to the list of incompatible hardware but it is obvious. Sony has also removed Linux OS capability in a previous firmware upgrade, so don't bother considering Linux and running FFXI in WINE, especially since WINE is only for x86 processors. (The CELL CPU is a PowerPC processor.)
Your best bet is either a 360 (non-4 GB versions since the storage is too small to install FFXI) or a cheap PC (less than $500) that has a non-integrated (aka non-Intel GMA and non-AMD/Nvidia integrated GPU). FFXI can run on Intel GMA chips, but they are specific models-- 3000 and 4500 series. Some netbooks with GMA 3000 may or may not run it, or run it slowly. AMD series 4200 and lower are mostly integrated GPUs found in low-end laptops and PCs will run FFXI very poorly or not at all. Nvidia series 210, 9200, 8200/8300, 7200/7300, 6200 (especially 6250) and lower will run FFXI very poorly.
Simply put: The launch versions of the PS3 in North America and Europe (even if emulated) from 2005 to 2007 are the only PS3 systems able to run FFXI.
