I just don't see where this "VIT and DEF don't do anything" commentary is coming from. Sure, PDT is generally better, but VIT will still lower your enemy's base damage, and DEF will still lower your enemy's pDIF. They most certainly do something.

If it wasn't such a large amount of all three of the stats on kabuto, I wouldn't even make the argument. Damage reduction is going to be similiar between the two pieces, but the 50hp on kabuto definitely has more of a chance of saving you over a small difference in damage reduced.
