Every mission/expansion is different. Party setups and strategy will differ from fight to fight and expansion to expansion. Some storylines progress strangely, where some fights are way tougher than the ones that follow. There's a lot of job discrimination in the playerbase, especially for the CoP missions, so don't be surprised if you have trouble progressing with that storyline (until the June update when they are removing at least part of the level cap from that expansion). However, I've also seen BST duo decimate a number of the city storyline missions (except for the final ones that require almost a full party).
But keep in mind that they're upping the level cap soon, and that may make this entire discussion moot. Level 99 BST duo would probably be able to pwn most of the existing missions. -

In that case, a WAR or MNK and RDM would probably work well together until you both had subjobs and access to the extra jobs. You'll want some curing power, and RDM would be versatile enough to do some DD, enfeebling, and curing.
After you've gotten settled in with the basic stuff like subjob, chocobo, extra jobs, etc. you can play around with the jobs some more and see what works as a fun combo. DRG duo works pretty well. -

With Fields of Valor, Campaign, and Dancer subjob you can pretty much solo/duo your way from 1 to 75 nowadays.
Now since I'm assuming you're keeping your 60 PLD account, and she's starting with a fresh account and that'll limit your starting options. DD and Mage may be a decent combination until you can both have the extra jobs unlocked. RDM and MNK should be ok.
Since you have a level 30+ account that can get the extra jobs, you may want to unlock DNC and duo that with your GF on a melee job until you can unlock DNC for her. -

Most of the jobs you listed are unlocked through quests once you level a starting job to 30. So out of your choices that leaves monk or warrior. Warrior makes a decent subjob for most of the jobs you've listed (at least for lower levels), so that's a good job to take to at least level 37. Monk makes a good subjob for warrior when you're just starting out, so take that to around 18. If you really want to do well in the game, you'll want to have a variety of jobs around 37+ to use as subjobs. Warrior, Samurai, Ninja, Thief, and Dancer are all situational subjobs for many melee jobs.
As for what job to play once you've gotten started and have the advanced jobs, that's really a matter of preference. If you want to be a tank, then level PLD. If you want to be a damage dealer, the rest of the jobs you listed will work fine. Dragoon works pretty well for soloing, but you'll want to have White Mage levelled for a subjob in that case.
